Here is a quick and easy breakfast recipe. However, if your mornings are like mine then some days your rushing around the house like a mad lady throwing a pop-tart at your kids and saying “hurry, we will eat in the car!” These blueberry muffins are simple enough you can make them the night before (in my case after the kids were in bed) and have a healthy breakfast option. It has oatmeal in it, so it has to be healthy. Right?
- 1 cup flour
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup brown sugar
- 3/4 cup rolled oats (also knows as old-fashioned oats)
- 1 egg
- 1 cup milk
- 1/4 cup melted butter
- 3/4 cup blueberries (fresh or frozen)
- sugar for sprinkling
In a mixing bowl, mix the flour, baking powder, salt and cinnamon. Add sugar and oats, mix all together. In a separate bowl beat egg, milk, and butter. Then add to dry ingredients and stir until moist. Next, fold in blueberries. After everything is mixed fill muffin tins about 2/3 full. Sprinkle with sugar and bake at 375 degrees for 20 minutes or until golden brown. I was able to get 12 muffins out of this recipe.
